This October, our star vegetable is the versatile leek – equally at home in a stir fry or a pie. What’s your favorite way to prepare leek? We challenge you to find a tastier recipe than this leek tarte tatin. Enjoy!

What do you need?

Ingredients

  • 2 leeks
  • 50g crème fraîche
  • Pinch of chili powder
  • Salt and pepper
  • Garlic oil (or vegetable/olive oil)
  • 1 large roll of puff pastry
  • 1 pack of feta cheese

Required:

  • Quiche mold
  • Oven

For 4 persons

Preparation Method:

  1. Preheat the oven to 200°C. Cut the white and light green part of the leeks into ½ cm rings. Wash in a colander under cold running water and drain well.
  2. Grease the bottom of the quiche mold with (garlic) oil. Arrange the leek rings in the mold, right up to the edges, making sure they are tightly packed together.
  3. Cut the feta cheese into thin slices and spread over the leek. Sprinkle some salt, chili, and pepper on top.
  4. Roll out the fresh puff pastry. Using the outside of a spoon, spread the puff pastry with crème fraiche to the same size as the quiche mold. Place the dough on top of the leek and feta mix with the crème fraîche layer on the inside. Press the dough down against the edges of the mold, so the excess dough falls off and the dough gets a nice, serrated edge.
  5. Now push the edges of the dough down around the leeks, tucking them in. Prick holes in the dough in about 15 places with a fork. Bake the tart tatin just below the centre of the oven for 25 mins, until the pastry is golden brown.
  6. Remove the tart tatin from the oven and let rest for 5 mins. Place a large plate on top of the quiche mold and flip it over, so the leeks are now on top. Season with a little more salt, chili, and pepper.
